Watermelon Popsicles

A couple of weeks ago I wrote about 10 must-try summer cocktails that should keep you cool and refreshed. Well, if you live just about anywhere in the U.S., you’ve experienced heat indexes in the triple digits recently, which is why popsicles have to happen right now. With only five ingredients in this recipe, including seasonal watermelon, things just got a little cooler in the kitchen! As the recipe suggests, switching out water with something a little more (ahem) adult is always an option.

Ingredients: (10 popsicles) 

  • 1 small seedless watermelon, juiced to make 3 cups
  • 1/2 cup water**
  • 1/2 lime juice
  • 1/2 teaspoon salt
  • 10 thin slices kiwi
  • 1 set of popsicle molds

** Kick it up by substituting water with vodka, rum, Prosecco or one of these Sauvignon Blancs.

Watermelon Kiwi Popsicles

Mix juiced watermelon, water, lime and salt in a bowl, whisking to incorporate and dissolve the salt. Drop the sliced kiwi into the molds.

Fill each mold to the line, insert wooden sticks, and store in the freezer to harden for about 6 hours.

Once frozen, pop your cold treats from the mold and enjoy a chilled, seasonal taste of summer — perfect for beating the heat. Or serve the adult version at an outdoor gathering in lieu of happy hour!
